Cajun Seafood Alfredo Pasta
Prawns and Scallops with Fettucine Alfredo. This serves 2 people so this makes a great special dinner for your anniversary or valentines day.
Ingredients
- 1/2 pound bay scallops
- 1/2 pound prawns, (peeled and tails removed)
- 2 tbsp Mae’s Seasonings Cajun Blackened divided
- 1 tbsp olive oil, divided
- 1-2 tbsp butter
- Fettuccine pasta
- Freshly grated parmesan cheese
Alfredo Sauce:
- 1/2 cup butter
- 2 cups whipping cream
- 3 tsp granulated garlic
- 1 tsp pepper
- 1/2 cup shredded parmesan cheese
- Roux: 1 tbsp flour and 1 tbsp olive oil
Instructions
- Make Alfredo first: Melt butter in a medium saucepan over medium heat. Add cream, granulated garlic and pepper. Once heated through, add parmesan and let simmer over low heat about 10 minutes or until parmesan has melted. Mix together flour and oil together and add into sauce to thicken. You do not want it to be too thick because if you have leftovers it will thicken up. If this happens just whisk some milk into it.
- In a small bowl combine scallops, 1/2 tbsp oil and 1 tbsp Cajun Blackened; set aside. In another bowl combine prawns, 1/2 tbsp oil, and 1 tbsp Cajun Blackened; set aside. Cook pasta according to package directions; drain and set aside.
- In a medium frypan on medium heat, heat up some butter; add prawns. Cook for 2 minutes or until pink and no longer rubbery. Remove from pan and set aside. In the same pan, add scallops. Sear scallops for 1 1/2 minutes per side. They should have a golden crust on each side. Remove from pan and set aside.
- Mix together fettuccine with some alfredo sauce and place on plates.
- Top with seafood and some parmesan.
