Chicken Fajita Salad
Salad recipe made with Mae's Seasonings Chili Lime. This is a great easy dinner in the summer months. And an easier recipe than making Fajitas when you are short on time.
Ingredients
Salad:
- 2 chicken breasts, thinly sliced
- 1 tbsp olive oil
- 1 red bell pepper, thinly sliced
- 1 orange bell pepper, thinly sliced
- 1 red onion, thinly sliced
- 1/2 head romaine, cut into bite sized pieces
Dressing & Marinade:
- 1/2 cup olive oil
- 1/2 cup lime juice
- 1 tbsp honey
- 4 garlic cloves, minced
- 1 tsp Mae’s Seasonings Chili Lime
- 1/2 tsp salt
Instructions
- Mix together ingredients for the dressing. Save half for the dressing and marinate the chicken slices in the other half for at least 3 hours.
- In a large frypan over medium - high heat, sauté peppers, and onions in oil until lightly browned. Remove from pan and set aside on a plate.
- In same frypan, sauté chicken until cooked and no longer pink.
- On 2 plates, place romaine and top with chicken and pepper mixture and serve with remaining dressing.
