Chipotle Beef & Pepper Soup
Pulled Beef Soup made with Mae's Seasonings Chipotle Cocoa. Serve with a slice of cornbread or garlic toast for a complete meal.

Ingredients
- Olive oil
- 2 red onions, thinly sliced
- 3 red bell peppers, thinly sliced
- 6 - 8 garlic cloves, minced
- 3 cups corn kernels
- 8 cups beef broth
- 2 tbsp hot sauce
- 1 tbsp Mae’s Seasonings Chipotle Cocoa
Pulled Beef:
- 2 - 4 pounds beef rib roast
- 1 tbsp Mae’s Seasonings Chipotle Cocoa
- Juice from 1 lime (2 tbsp)
- 2 tbsp olive oil
- 2 cups beef broth
- 3/4 cup orange juice
Instructions
Pulled Beef:
- Combine Chipotle Cocoa, lime juice and olive oil. Brush roast with this mixture. In a slow cooker, mix together beef broth and orange juice and place beef on top. Cook on low for 6 - 8 hours or until very tender. Let rest for 20 minutes then shred with 2 forks and set aside.
Soup:
- In a large pot on medium - high heat, sauté onions and peppers in some oil until lightly browned. Add in garlic and cook for 1 minute. Add corn and cook until heated up. Add in beef broth, hot sauce, Chipotle Cocoa and pulled beef.
- Reduce heat to low and let simmer for 20 minutes.
- Taste and adjust seasonings if needed.
