Chipotle Chicken Corn Chowder
Mexican Inspired Chowder made with Mae's Seasonings Chipotle Cocoa. Pair with a salad for a complete meal.
Ingredients
- 8 slices bacon, diced
- 1 large onion, diced
- 3 red bell peppers, diced
- 6 - 8 garlic cloves, minced
- 4 cups corn kernels
- 4 cups diced potatoes
- 8 cups chicken broth
- 4 cups cooked chicken
- 2 tbsp Mae’s Seasonings Chipotle Cocoa
- 1 L whipping cream
- Roux: cornstarch and water
- 2 cups shredded cheddar cheese
- Salt and pepper to taste
Instructions
- In a large soup pot on medium - high heat, cook bacon until cooked. Remove and set aside.
- In the bacon fat, sauté onion, red bell peppers, and garlic until lightly browned.
- Stir in corn to heat up. Then add in potatoes, chicken broth, chicken, and Chipotle Cocoa and cook until potatoes are tender, about 15 minutes. Add in whipping cream and heat until heated through.
- Mix together equal amounts of cornstarch and water together and add to soup to thicken. Start with 1 tbsp of each. Add more until your desired consistency.
- Turn off heat and add in cheddar. Once melted taste and season if needed. Serve.
