Ginger Cookies

Ginger cookies made with Mae's Seasonings Gingerbread Spice. These are soft ginger cookies rolled in either red or green sugars for Christmas baking.

Ingredients
  

  • 1/2 cup red and green sugars
  • 2 cups all purpose flour
  • 1 tbsp baking soda
  • 1 tbsp Mae’s Seasonings Gingerbread Spice
  • 3/4 cup butter, softened
  • 1 cup granulated sugar
  • 1 egg, lightly beaten
  • 1/4 cup molasses

Instructions
 

  • Preheat oven to 350 F. Lightly grease 2 cookie sheets. Pour red and green sugars on separate plates; set aside.
  • In a medium bowl, stir together flour, baking soda and Gingerbread Spice until well blended. In a large bowl, beat butter until creamy. Gradually add sugar until blended. Then beat in egg and molasses until well mixed. Beat in flour mixture. Roll into 1-inch balls and roll in either red or green sugars. Place on prepared cookie sheets.
  • Bake for 8 minutes or until flattened. (Don’t overbake, cookies should be chewy)
  • Cool on a cooling rack.
