Greek Rice Bowl

Vegetarian Rice Bowl made with Mae's Seasonings Greek Souvlaki. Made with roasted chickpeas for the protein. You can add grilled chicken if you wish.

Ingredients
  

Chickpeas:

  • 1 can (14 oz) chickpeas, drained and rinsed
  • 2 tbsp olive oil
  • 1 tbsp red wine vinegar
  • 1 tbsp lemon juice
  • 4 garlic cloves, minced
  • 2 tsp Mae’s Seasonings Greek Souvlaki
  • 1 tsp salt

Bowls:

  • 1 cup rice, cooked to package directions
  • 1/2 cup cherry or grape tomatoes, halved
  • 1/2 cup chopped cucumbers
  • 1/4 cup kalamata olives
  • 1/4 cup sliced red onions
  • 1/2 cup crumbled feta cheese
  • Tzatziki sauce*

Instructions
 

  • Preheat oven to 350 F.
  • In a medium bowl, stir together chickpeas, olive oil, red wine vinegar, lemon juice, garlic, Greek Souvlaki and salt.
  • Place on baking pan and cook for 15 - 20 minutes or until lightly browned.
  • Assemble bowls with cooked rice, chickpeas, tomatoes, cucumbers, olives and red onions.
  • Top with feta and Tzatziki.

GREEK SOUVLAKI SEASONING
