Lasagne Soup
Lasagne Soup made with Mae's Seasonings Tuscan Herb and Garlic. This has everything Lasagne has in it but in a soup version so its great for a weekday dinner. This is alot faster than making a Lasagne.
Ingredients
- 1 large onion, chopped
- 6 garlic cloves, minced
- 2 tbsp olive oil
- 1 pound ground beef
- 1 tbsp Mae’s Seasonings Tuscan Herb & Garlic
- 1 can (28 oz) whole tomatoes
- 1 can (14 oz) crushed tomatoes
- 6 cups beef broth
- 2 tbsp brown sugar
- 1 cup ricotta cheese
- 1 1/2 cups shredded mozzarella cheese
- 1/2 cup shredded parmesan cheese
- Pappardelle pasta or your favourite pasta
Instructions
- In a large pot on medium - high heat, sauté onions in oil until lightly browned. Add in garlic and sauté for 1 minute.
- Add in ground beef and Mae’s Tuscan Herb and cook until beef is no longer pink. Add in whole tomatoes, crushed tomatoes, beef broth and brown sugar and stir to combine. Bring to a boil and reduce heat and let simmer for 30 minutes. Taste and adjust seasonings if needed.
- In a small bowl, mix together ricotta, mozzarella and parmesan.
- Meanwhile, cook pasta according to package directions.
- Don’t add pasta to the soup, just per serving. The pasta will get mushy in the soup as it sits. Place soup in bowl and top with pasta and cheese mixture.
