Lemon Garlic Chicken Soup
Chicken Soup made with Mae's Seasonings Rosemary Garlic. The chicken is cooked in the chicken for very tender chicken. Serve with a slice of garlic toast if you like.
Ingredients
- 1 pound chicken breasts or thighs
- Salt and pepper
- 2 tbsp olive oil
- 1 onion, diced
- 1 cup diced carrots
- 1 cup diced celery
- 3 garlic cloves, minced
- 1 tbsp Mae’s Seasonings Rosemary Garlic
- 8 cups chicken broth
- 1 cup uncooked rice
- Juice of 1 lemon (2 tbsp)
Instructions
- Season chicken with salt and pepper. In a large frypan over medium - high heat, sear chicken in oil until lightly browned, about 3 - 5 minutes per side. Transfer to a plate and set aside.
- In a large pot on medium - high heat, sauté onions, carrots and celery until lightly browned. Add in garlic and Mae’s Rosemary Garlic and cook for 1 minute.
- Add in chicken broth and chicken. Bring to a boil and reduce heat to low and let simmer for 30 minutes. Remove chicken and let sit for 10 minutes; then shred with 2 forks.
- Meanwhile, cook rice according to package directions.
- Don’t add rice to the soup unless you plan on serving it all. Or just add per serving as the rice will get mushy as it sits.
- Add in shredded chicken and lemon juice. Taste and adjust seasonings if needed.
