Baked Potato Bacon Soup
Creamy Potato Soup made with Mae’s Seasonings Garlic Lovers. This is a excellent comfort food perfect for colder months. Pair it with a salad for a full meal. You could also top with cheddar cheese if you like. Read down below for vegan version.
Ingredients
- 1 onion diced
- 1/2 pkg bacon diced
- 2 tbsp Mae's Seasonings Garlic Lovers
- 1 bunch green onions diced
- 4 - 6 potaotes baked, cooled and cubed
- 3 cups chicken broth
- 1 1/2 cups half and half cream
- 2 tbsp flour
- 2 tbsp canola oil
- 3/4 cups sour cream
Instructions
- In a large frypan over medium - high heat sauté onions until lightly browned. Then add in bacon and cook until just getting crispy. Add in Garlic Lovers and green onions and cook for 1 minute. Transfer to a large pot.
- Add in cubed potatoes and chicken broth. Heat on medium - high until hot. Add in cream.
- In a small bowl, mix together flour and oil to make a roux. Mix into soup until it thickens. Repeat roux if not thick enough.
- Take the soup off the heat and whisk in sour cream. Taste and adjust seasonings if needed.
- VEGAN: omit the bacon and replace chicken broth with veggie broth. And replace cream with coconut milk.
