Cajun Blackened Rub - Mae's SeasoingsCajun Blackened Rub is a blend of spices that is used In Louisiana cooking. Traditional Cajun dishes are Jambalaya, Gumbo, Crawfish / Shrimp boil, Po’ Boy Sandwiches and Red Beans and Rice. In Cajun cooking they also use the Holy Trinity which consists of onion, celery, and bell peppers.

Crawfishshrimp, and andouille sausage are staple meats used in a variety of Cajun dishes.

Andouille sausage is a smoked sausage that plays a crucial role in Creole cuisine like Jambalaya and Gumbo. It is made of pork, onions, wine, and seasonings.

A lot of Cajun dishes are also served with cornbread.

Cajun cuisine is a style of cooking developed by the CajunAcadians who were deported from Acadia to  Louisiana during the 18th century and who incorporated West AfricanFrench and Spanish cooking techniques into their original cuisine.

Cajun and Creole cuisine have been mistaken to be the same, but the origins of Creole cooking began in New Orleans, and Cajun cooking came 40 years after the foundation of New Orleans. The main difference between the two blends is the herbs. Creole will have more oregano or other herbs in this blend so Cajun Seasoning can be used in place of Creole Seasoning. They do have the same profile flavour, but Cajun Seasoning has more heat.

Other dishes where Cajun Seasoning is used would be Blackened Chicken or Salmon, Fried Chicken, in cream sauces for pasta, sprinkle in when cooking prawns and sprinkle on devilled eggs. These are just a few examples. Cajun Seasoning is one of those spice blends that you can use just about anywhere where you want some extra flavour.

This blend of spices main component is from Smoked Paprika.

Smoked paprika, is made from peppers that are smoked and dried over oak fires. This gives the red powder its smoky flavour.

Paprika is used as an ingredient in numerous dishes throughout the world. It is generally used to season and colour rice, stews, and soups, and it is in the formation of sausages like Chorizo. Smoked Paprika is also great in spice blends. The flavour is brought out more by heating it in oil.
