Traditional Cajun dishes are Jambalaya, Gumbo, Crawfish / Shrimp boil, Po’ Boy Sandwiches and Red Beans and Rice. In Cajun cooking they also use the Holy Trinity which consists of onion, celery, and bell peppers.

Crawfishshrimp, and andouille sausage are staple meats used in a variety of Cajun dishes.

Andouille sausage is a smoked sausage that plays a crucial role in Creole cuisine like Jambalaya and Gumbo. It is made of pork, onions, wine, and seasonings.

A lot of Cajun dishes are also served with cornbread.

Cajun cuisine is a style of cooking developed by the CajunAcadians who were deported from Acadia to  Louisiana during the 18th century and who incorporated West AfricanFrench and Spanish cooking techniques into their original cuisine.

Cajun and Creole cuisine have been mistaken to be the same, but the origins of Creole cooking began in New Orleans, and Cajun cooking came 40 years after the foundation of New Orleans.
