Equipment

  • 12 inch cast iron skillet

Ingredients
  

Filling:

  • 3 tbsp butter, divided 
  • 1 onion, chopped 
  • 3 carrots, diced 
  • 1 cup sliced mushrooms 
  • 4 - 6 cloves garlic, minced 
  • 1 pound ground beef or ground lamb 
  • 1 tbsp Mae’s Seasonings Steak Spice 
  • 2 tsp dried rosemary 
  • 3 tbsp tomato paste 
  • 3 tbsp all purpose flour 
  • 3/4 cup dry red wine or beef broth 
  • 2 cups beef broth 
  • 1 tbsp Worcestershire sauce 
  • Salt and pepper to taste 
  • 2 cups frozen veggies of choice (corn and/or peas) 

Potatoes:

  • 2 1/2 pounds Yukon gold or russet potatoes, peeled and chopped into 2 inch pieces 
  • 2 tsp salt  
  • 3 tbsp butter 
  • 2 tbsp sour cream 
  • 1/4 cup half and half cream 
  • Salt and pepper to taste 

Instructions
 

  • Potatoes: In a large pot on medium high heat, place potatoes and cover with water and add salt. Heat to boiling, once boiling cook for 10 minutes. Drain and place potatoes back in pot. Place back on stove to dry. Once dry, mash with butter. Add in sour cream and as much cream to your desired consistency. Season with salt and pepper. Set aside.
  • Filling: Preheat oven to 400 F. In a 12 inch cast iron skillet over medium high heat, melt 2 tbsp butter. Add onion and carrots and saute until lightly browned. Add in mushrooms and garlic and cook for 2 - 3 minutes until mushrooms are golden. Then add in ground beef and cook until beef is no longer pink; add in Steak Spice and rosemary and cook for 1 minute. Stir in tomato paste and cook for 1 minute. Then stir in flour and cook for 1 minute. Stir in red wine and cook until reduced about 3 minutes. Add in beef broth and Worcestershire sauce and reduce heat to low and let simmer for 3 minutes. Taste and add salt and pepper if desired. Stir in frozen veggies. Take off the heat and top with mashed potatoes, smooth out with a spatula. Melt the remaining 1 tbsp butter and brush over mashed potatoes.
  • Bake for 20 minutes then turn up to broil and broil for 3 - 5 minutes until potatoes are a nice golden brown. Let sit for 10 - 15 minutes before serving.
