
Shrimp Po'Boys
Ingredients
- 1 pound large shrimp, peeled and tails removed
- 3/4 cup buttermilk
- 1 large egg
- 1 - 2 tbsp hot sauce
- 3/4 cup flour
- 1/2 cup cornmeal
- 1 tbsp Mae’s Seasonings Cajun Blackened
- 1/2 tsp cayenne pepper
- 1/2 tsp black pepper
- 1 tsp salt
- 2 - 3 tbsp peanut or canola oil
- 4 hoagie rolls
- Shredded lettuce
- Sliced tomatoes
Cajun Remoulade Sauce:
- 1 cup mayonnaise
- 2 cloves garlic, minced
- 1 green onion, finely chopped
- Juice from 1/2 lemon
- 1 tbsp creamed horseradish
- 1 tbsp pickle juice or white wine vinegar
- 1 tbsp Worcestershire sauce
- 5 tsp Dijon mustard
- 2 tsp Mae’s Seasonings Cajun Blackened
- 2 tsp hot sauce
- 1 tsp brown sugar or honey
Instructions
- In a medium bowl, mix together buttermilk, egg, and hot sauce and toss with prawns. Let marinate for at least 4 hours.
- Meanwhile make the Cajun Remoulade Sauce and let sit in refrigerator.
- In a large bowl, mix together flour, cornmeal, Mae’s Cajun, cayenne, pepper, and salt. Place prawns in flour mixture, making sure to coat all sides.
- In a large frypan, heat the oil on medium - high heat; add enough so that it comes up to about 1/4 inch of the pan. Once the pan sizzles you can start cooking the prawns. Cook about 2 minutes per side, until golden brown. Set aside on paper towels.
- Spread Cajun Remoulade on both sides of the hoagie rolls. Put the lettuce on the bottom and top with prawn and tomatoes.
