
Stuffed Pepper Soup
Soup made with Mae's Seasonings Tuscan Herb and Garlic. This is faster than making stuffed peppers. This is stuffed pepper in soup form. This freezes very well. If you do freeze this, don't add the rice as it could get mushy.
Ingredients
- 1 large onion, chopped
- 3 red or orange bell peppers, chopped
- 2 tbsp olive oil
- 6 garlic cloves, minced
- 1 pound ground beef
- 1 tbsp Mae’s Seasonings Tuscan Herb & Garlic
- 1 can (28 oz) whole tomatoes
- 1 can (14 oz) crushed tomatoes
- 6 cups beef broth
- 2 tbsp brown sugar
- 1 cup rice
- Shredded mozzarella cheese, optional
Instructions
- In a large pot on medium - high heat, sauté onions and bell peppers in oil until lightly browned. Add garlic and cook for 1 minute.
- Add in ground beef and Mae’s Tuscan Herb and cook until beef is no longer pink. Add in whole tomatoes, crushed tomatoes, beef broth and brown sugar. Stir to combine and bring to a boil.
- Reduce heat to low and let simmer for 30 minutes. Taste and adjust seasonings if necessary.
- Meanwhile, cook rice according to package directions.
- Don’t add rice to the soup, just per serving as the rice will get mushy as it sits.
