Cuisine American
- 3 lbs red skinned potatoes
- 1/2 cup thinly sliced celery
- 1/2 cup minced red onion
- 1/2 cup thinly sliced green onion
- 6 hard boiled eggs, cooled and sliced
Dressing:
- 1 1/2 cups mayonnaise
- 1 tbsp apple cider vinegar or pickle juice
- 1 tbsp granulated sugar
- 1 tbsp Mae’s Seasonings Garlic Lovers
- 1 tbsp yellow mustard
- 1 tsp smoked or sweet paprika, for garnish
You can either bake or boil your potatoes. But baking them has more flavour.
Bake: Preheat oven to 400F. Wash potatoes and prick them with a fork. Bake for 50 minutes or up to 1 hour or until they are fork tender. Remove from oven and cool completely.
Boil: Peel and cut potatoes into even sized pieces. Place in a large pot, and cover with water. Once boiling reduce heat to medium and cook for 10 minutes or until fork tender. Strain and cool completely.
Mix together all ingredients for dressing and set aside.
Once potatoes are cool slice up for salad, and mix with celery, onions, eggs and dressing. Sprinkle with paprika.
