This Honey Mustard Chicken Salad is made using Mae's Seasonings Garlic Lovers in the marinade and in the Honey Mustard as well. You can either grill the chicken on the BBQ or in a frypan on the stove.
2 large chicken breasts, cut in half horizontally to make 4 fillets
3 tbsp honey
3 tbsp Dijon mustard
2 tbsp olive oil
Juice from 1/2 lemon (1 tbsp)
1 tbsp Mae’s Seasonings Garlic Lovers
SALAD:
1/2 head iceburg lettuce, cut into bite sized pieces
1 cup cherry or grape tomatoes, halved
1 cup cubed cheddar cheese
6 pieces bacon, cooked & chopped
2 green onions, thinly sliced
HONEY MUSTARD DRESSING:
1/2 cup sour cream
1/2 cup mayonnaise
3 tbsp honey
3 tbsp Dijon mustard
1 tbsp Mae’s Seasonings Garlic Lovers
1 tsp granulated onion
Instructions
In a small bowl, mix together all marinade ingredients and toss with the chicken. Let sit in fridge for at least 6 hours.
Meanwhile, while chicken is marinating make Honey Mustard Dressing: In a medium bowl, combine all ingredients until well mixed. Let sit in fridge for at least 1 hour before using.
Grill chicken on the BBQ or in a indoor grill pan, about 5 minutes per side or until no longer pink. Set aside. Don't slice until chicken has set for 10 minutes.
Cook bacon in a frypan over medium heat until crispy. Chop and set aside. Then slice chicken breasts.
On 2 plates, place iceberg and top with tomatoes, cheddar, bacon, chicken and green onions. Serve with honey mustard; Honey Mustard Chicken Salad!
