Roasted Yam Soup

Roasted Yam Soup made with Mae's Seasonings Butter Chicken. The yams and red bell peppers are roasted for more flavour. Pair with some Naan Bread if you wish

Ingredients
  

  • 1 large yam
  • 2 red bell peppers
  • Olive oil
  • 2 tsp Mae’s Seasonings Butter Chicken, divided
  • 1 onion, diced
  • 4 - 6 garlic cloves, minced
  • 2 cups vegetarian broth
  • 1 can 400 ml coconut milk

Instructions
 

  • Preheat oven to 375 F. Cut up yam in large chunks and toss with olive oil and 1 tsp Butter Chicken Seasoning. Then slice peppers in half and discard the seeds and brush tops with olive oil. Place yams and red peppers in a baking pan and bake for 30 minutes.
  • Meanwhile, in a medium pot on medium - high heat, saute onions until lightly browned. Add garlic and 1 tsp Butter Chicken Seasoning and cook 1 minute. Add in veggie broth and cooked yams and bell peppers.
  • Using an immersion blender, puree soup and bring to a boil and let simmer for 10 minutes. Add in cream and heat until warmed up.
  • Taste and adjust seasoning if needed.
