Broccoli Cheddar Soup

- 1/3 cup butter
- 1 onion, chopped
- 4 garlic cloves, minced
- 2 tsp Mae’s Seasonings Tuscan Herb & Garlic
- 1/3 cup flour
- 2 1/2 cups half and half cream
- 5 cups chicken broth
- 1 head broccoli florets
- 1 cup Velveeta cheese, cubed
- 3 cups shredded Cheddar cheese
- Salt and pepper to taste
- 1 tsp hot sauce, optional
Melt butter in a large pot over medium heat. Add the onion and cook until softened and is lightly browned. Add in garlic and Tuscan Herb and cook for 1 minute.
Sprinkle the flour over and mix in. Cook for about 2 minutes.
Slowly whisk in the half and half. Then pour in the chicken broth and whisk to remove any lumps if any.
Bring the mixture to a boil then add in broccoli. Cook until tender, about 10 minutes.
Using an immersion blender, blend the soup until your desired consistency.
Return soup to stove and add in both cheeses, stirring until melted.
Taste and add salt and pepper if needed and hot sauce if using.
