Chicken Caprese Salad
Caprese in a salad form with the addition of Romaine lettuce and topped with grilled chicken that was marinated using our Tuscan Herb and Garlic. This is great for lunch or dinner. Pair with some garlic toast if you prefer.

Marinade and Dressing:
- 2 large chicken breasts, cut in half horizontally to make 4 fillets
- 1/2 cup balsamic vinegar
- 1/4 cup olive oil
- 2 tsp honey
- 2 tsp Mae’s Seasonings Tuscan Herb & Garlic
Salad:
- 1/2 head romaine, chopped into bite sized pieces
- 1 cup cherry or grape tomatoes, halved
- 1/2 cup bocconcini cheese or cubed Mozzarella
- 1/4 cup basil leaves, chiffonade
Mix together balsamic vinegar, olive oil, honey, and Tuscan Herb. In a small bowl, pour half of this mixture over the chicken and let marinate in fridge for at least 6 hours Reserve the other half for the dressing,
In a large frypan or a indoor grill pan over medium - high heat, cook chicken about 2 - 3 minutes per side or until cooked and no longer pink; set aside. Let rest for 5 - 10 minutes before serving.
On 2 plates, place romaine, tomatoes, mozzarella, and basil.
Slice chicken and place on top.
Serve with the reserved dressing.
