Chili Lime Rice

Rice with Mae's Seasonings Chili Lime and sauteed veggies. Perfect side dish for a Mexican themed dinner or a BBQ,

Ingredients
  

  • 1 tbsp olive oil
  • 1 cup rice, Jasmine or Basmati
  • 1/2 onion, diced
  • 3 garlic cloves, minced
  • 1 red bell pepper, diced
  • 2 cups chicken or vegetable broth
  • 1 cup corn kernels
  • 2 tsp Mae’s Seasonings Chili Lime
  • 1/2 tsp salt
  • 1/2 lime, juice and zest

Instructions
 

  • Rinse the rice before cooking. Heat oil in a large saucepan over medium - high heat. Add rice and cook about 3 - 5 minutes or until golden. Then add the onions, garlic, and bell peppers and saute until softened, about 2 - 3 minutes.
  • Add in broth, corn, Chili Lime, and salt. Bring to a boil; cover and reduce heat to low. Let simmer for 15 minutes or until the water is absorbed and the rice is tender.
  • Remove pan from the heat but keep it covered and let sit for 10 minutes.
  • Add lime juice and zest and mix into the rice.
