Fried Chicken Salad

Salad made with buttermilk fried chicken tenders. This goes very well when served with honey mustard. This is great for lunch or dinner as this is a full entree salad.

Ingredients
  

  • 1 pound chicken tenders
  • 3/4 cup buttermilk
  • 2 tbsp hot sauce
  • 1 tsp salt, divided
  • 1/3 cup all purpose flour
  • 1/3 cup rice flour
  • 1/3 cup cornstarch
  • 1 tsp baking powder
  • 4 tsp Mae’s Seasonings Oma’s Fried chicken
  • canola oil

Salad:

  • lettuce greens
  • diced tomatoes
  • red onion slices
  • 8 bacon slices, cooked
  • 4 hard boiled eggs
  • shredded Cheddar cheese 

Instructions
 

  • In a medium bowl, combine together buttermilk, hot sauce, and 1/2 tsp salt. Toss well with chicken and let marinate for at least 8 hours or overnight.
  • In a medium bowl combine together all purpose flour, rice flour, cornstarch, baking powder and Oma’s Fried Chicken Seasoning and 1/2 tsp salt. Set aside.
  • In a large skillet over medium - high heat, cook chicken in canola oil for 2 - 3 minutes per side or until cooked and set aside.
  •  On 4 salad plates, place lettuce, tomatoes, red onions, bacon and eggs. Top with chicken and cheddar cheese.
  • Serve with your favourite creamy salad dressing. Honey mustard goes very well with this.
