Gingerbread Waffles
Waffles made with Mae's Seasonings Gingerbread Spice. Great for the holiday season. Also included is a easy cranberry sauce recipe.

Waffles:
- 2 cups all purpose flour
- 2 tsp baking powder
- 4 tsp Mae’s Seasonings Gingerbread Spice
- 1/2 tsp salt
- 1/2 cup butter, melted & cooled slightly
- 1/4 cup dark brown sugar, packed
- 1/4 cup molasses
- 3 large eggs
- 1 2/3 cups buttermilk
Cranberry Syrup:
- 2 cups cranberries
- 1 cup granulated sugar
- 1 cup orange juice
- 1/2 tsp Mae’s Seasonings Gingerbread Spice
- icing sugar, for serving (optional)
Syrup:
In a small saucepan over low heat, combine cranberries, sugar, orange juice, and Mae’s Gingerbread spice. Cook stirring frequently and adjusting heat to maintain a bare simmer, until the cranberries have completely softened, about 15 - 20 minutes. Strain the mixture through a fine mesh sieve, pressing on the cranberries to extract their liquid. Let cool and refrigerate until ready to use. Syrup can be stored in a sealed container in the fridge for up to 2 weeks.
Waffles:
In a large bowl mix together flour, baking powder, Mae’s Gingerbread spice and salt. In a medium bowl, mix together butter, brown sugar, molasses, eggs, and buttermilk. Then mix this into the flour mixture and stir well.
Preheat your waffle iron and once hot add about 1/3 cup batter and cook until lightly browned and crispy.
Serve with cranberry syrup and icing sugar if desired.
