  • 1/4 cup dark brown sugar, packed
  • 1/4 cup molasses
  • 3 large eggs
  • 1 2/3 cups buttermilk

Cranberry Syrup:

  • 2 cups cranberries
  • 1 cup granulated sugar
  • 1 cup orange juice
  • 1/2 tsp Mae’s Seasonings Gingerbread Spice
  • icing sugar, for serving (optional)

Instructions

Syrup:

  • In a small saucepan over low heat, combine cranberries, sugar, orange juice, and Mae’s Gingerbread spice. Cook stirring frequently and adjusting heat to maintain a bare simmer, until the cranberries have completely softened, about 15 - 20 minutes. Strain the mixture through a fine mesh sieve, pressing on the cranberries to  extract their liquid. Let cool and refrigerate until ready to use. Syrup can be stored in a sealed container in the fridge for up to 2 weeks.

Waffles:

  • In a large bowl mix together flour, baking powder, Mae’s Gingerbread spice and salt. In a medium bowl, mix together butter, brown sugar, molasses, eggs, and buttermilk. Then mix this into the flour mixture and stir well.
  • Preheat your waffle iron and once hot add about 1/3 cup batter and cook until lightly browned and crispy.
  • Serve with cranberry syrup and icing sugar if desired.
