Mexican Beef Pie

Mexican casserole made with Mae's Seasonings Chili & Taco, and our Chipotle Cocoa. A great Mexican inspired dish. Great for a weekday meal.

Ingredients
  

  • 1 onion, diced 
  • 6 garlic cloves, minced 
  • 1 pound ground beef 
  • 1 tbsp Mae’s Seasonings Chili & Taco 
  • 1 tbsp Mae’s Seasonings Chipotle Cocoa 
  • 1/4 tsp salt 
  • 1 can (28 oz) diced tomatoes 
  • 1 red bell pepper, diced 
  • 1 can (14 oz) red kidney beans  

Cornmeal Topping:

  • 3/4 cup cornmeal 
  • 1/2 cup all purpose flour 
  • 1/2 tsp baking soda 
  • 1/2 tsp salt 
  • 1/2 tsp granulated sugar 
  • 1 cup shredded cheddar cheese 
  • 3/4 cup buttermilk 
  • 1 egg 
  • 1 tbsp oil 

Instructions
 

  • Preheat oven to 450 F.                                                                            
  • In a large frypan, over medium - high heat, cook onion and garlic in oil until lightly browned. Then add in ground beef, Mae’s Chili & Taco, and Chipotle Cocoa. Cook until beef is cooked; stir in tomatoes, breaking them up a bit. Cook on low for 15 minutes, stirring occasionally. Stir in red bell peppers.
  • Arrange half of beef in a 2L casserole dish. Top with half can of beans. Repeat layers and set aside.
  • Cornmeal Topping: In a large bowl, combine cornmeal, flour, baking soda, salt, and sugar. Stir in cheese. In a small bowl, stir together buttermilk, egg, and oil. Add buttermilk mixture to cornmeal mixture, stir just to combine.
  • Spread cornmeal topping evenly over beef and beans. Bake for 20 minutes or until browned.
  • Let rest for 15 minutes before serving.
  • Serve with sour cream if desired.
