Preheat oven to 450 F.
In a large frypan, over medium - high heat, cook onion and garlic in oil until lightly browned. Then add in ground beef, Mae’s Chili & Taco, and Chipotle Cocoa. Cook until beef is cooked; stir in tomatoes, breaking them up a bit. Cook on low for 15 minutes, stirring occasionally. Stir in red bell peppers.
Arrange half of beef in a 2L casserole dish. Top with half can of beans. Repeat layers and set aside.
Cornmeal Topping: In a large bowl, combine cornmeal, flour, baking soda, salt, and sugar. Stir in cheese. In a small bowl, stir together buttermilk, egg, and oil. Add buttermilk mixture to cornmeal mixture, stir just to combine.
Spread cornmeal topping evenly over beef and beans. Bake for 20 minutes or until browned.
Let rest for 15 minutes before serving.
Serve with sour cream if desired.
