The Chipotle Pepper – aka Capsicum Annuum

This wonderful pepper is native to Mexico and Central America and is a smoked dried jalapẽno which provides a complex flavour to savory dishes.

When making these wonderful peppers, the jalapẽnos are left on the plant until they turn red and begin to dryout. Once this happens, they are harvested and placed in a firebox smoking chamber for several days. They will completely dry out and change to a darker redish brown. From this comes the Chipotle pepper.

These peppers are often used when cooking vegetables when you want your veggies to have that authentic “grilled” taste. Cooking with these peppers also provides a lot of depth in flavour and provides a nice finishing touch when it comes to colourful appeal.
