Potato Corn Chowder
Potato corn chowder is a classic comfort food that warms both the heart and soul. This creamy, hearty soup combines tender potatoes, sweet corn, and a medley of savory ingredients to create a dish that's perfect for cozy evenings.

- 1/2 pkg bacon, diced
- 1 large onion, diced
- 3 celery ribs, chopped
- 6 garlic cloves, minced
- 1 tbsp Mae’s Seasonings Tuscan Herb & Garlic
- 4 cups peeled & diced potatoes (about 3 potatoes)
- 4 cups chicken broth
- 4 cups corn kernels
- 3 cups half and half cream
- 3 tbsp flour
- 3 tbsp canola oil
- Salt, to season
In a large pot on medium - high heat, cook bacon until starting to get crispy. Remove bacon and set aside.
Leave 1 - 2 tbsp bacon fat in pot. Then sauté onion and celery until lightly browned. Add in garlic and Tuscan Herb and cook for 1 minute.
Add in diced potatoes and chicken broth and once boiling, turn down heat to medium - low and let simmer for 15 minutes. Add in corn and bacon and turn heat up to medium. Let cook for 2 minutes.
Add in half and half and once boiling turn down to low.
Mix together flour and oil and add to soup to thicken. Cook on low for 2 minutes.
Taste and add salt if needed.
