Roasted Zucchini Spears
Zucchini made with Mae's Seasonings Tuscan Herb and Garlic. This is also made with parmesan so there is no need for any breading.

- 1/3 cup freshly grated parmesan cheese
- 2 tsp Mae’s Seasonings Tuscan Herb & Garlic
- 1 tsp granulated garlic
- Salt and pepper to taste
- 2 zucchini, quartered lengthwise
- 1 tbsp olive oil
Preheat oven to 400 F.
In a small bowl, combine parmesan, Tuscan Herb, garlic, salt and pepper.
In a wide bowl or plate, rub zucchini with olive oil then with the parmesan mixture.
Place on a parchment paper lined baking sheet and bake for 12 - 15 minutes or until tender. Then broil for 2 minutes until crisp and golden brown.
