Cajun Buffalo Chicken Bites
Chicken bites made with Mae's Seasonings Cajun Blackened and our Honey Hickory BBQ Sauce. These are tossed with a easy buffalo sauce. Great for an Appy night or with a salad for dinner.

- 1/2 cup rice flour
- 1/2 cup cornstarch
- 2 tsp Mae’s Seasonings Cajun Blackened
- 1 tsp salt
- 1 egg
- 1/4 cup milk
- 1 lb boneless chicken breasts, (cut into 2 inch cubes)
- canola oil
- 1/2 cup hot sauce
- 1/3 cup butter
- 1/4 cup Mae’s Seasonings Honey Hickory BBQ sauce
- 2 tsp Mae’s Seasonings Cajun Blackened
In a bowl, combine flour, cornstarch, Cajun and salt. In another bowl, combine egg and milk. Dip each chicken cube into the egg milk mixture and then dredge in flour. Dip again in egg and flour mixtures to double coat.
Arrange in a single layer on a baking sheet and let sit in fridge for 10 minutes to chill.
In a deep pot, heat about 3 inches deep of oil to 350 F. Add chicken in batches and deep fry, turning as needed, until cooked through.
In a small saucepan on low heat, melt together hot sauce and butter, then add BBQ sauce and Cajun. Add chicken pieces and toss to fully coat with sauce. Serve with ranch if desired.
