Chili Lime Cod
Cod made with Mae's Seasonings Chili Lime. This is made in the oven but you can also BBQ this as well. Just wrap them in tinfoil as cod will fall apart on the grill. For a complete meal serve with corn on the cob and roasted potatoes.

- 2 cod fillets
- 1 tbsp olive oil
- 2 tbsp Mae’s Seasonings Chili Lime
Lime Butter:
- 2 tbsp butter melted
- 1/2 tbsp lime juice
- 1/2 tsp Mae’s Seasonings Chili Lime
Preheat oven to 350 F. Clean cod and pat dry with paper towels. Brush the oil over the cod then rub in Chili Lime and let sit for 20 minutes.
On medium - high heat, in a cast iron skillet heat up some oil. When hot, add the cod and sear about 2 - 4 minutes per side. Transfer to oven and cook for about 5 - 7 minutes, depending on the thickness of your fish. Serve the lime butter over your fish.
Lime Butter: In a small bowl, combine melted butter, lime juice and Chili Lime.
Let sit for 10 minutes before serving.
