Creamy Cajun Pasta Salad

- 3 cups macaroni, uncooked
- 1 tbsp olive oil
- 1 red bell pepper, finely chopped
- 1/2 cup thinly sliced green onions
- 1/2 cup minced red onions
- 1/2 cup minced celery
Dressing:
- 1 1/2 cups mayonnaise
- 4 cloves garlic, minced
- Juice from 1/2 lemon
- 2 tbsp Dijon mustard
- 1 tbsp creamed horseradish
- 1 tbsp pickle juice or white wine vinegar
- 1 tbsp Worcestershire sauce
- 1 tbsp hot sauce
- 4 tsp Mae’s Seasonings Cajun Blackened
Boil macaroni according to package directions. Drain well and transfer to a large bowl and add oil. let sit to dry.
Meanwhile make dressing: In a medium bowl combine all ingredients together and mix well.
Once pasta has cooled down, add in red bell pepper, green onions, red onions and celery. Mix together and add the dressing and mix to combine.
Let sit in refrigerator for at least 2 hours before serving.
