
Creamy Cajun Pasta Salad
Ingredients
- 3 cups macaroni, uncooked
- 1 tbsp olive oil
- 1 red bell pepper, finely chopped
- 1/2 cup thinly sliced green onions
- 1/2 cup minced red onions
- 1/2 cup minced celery
Dressing:
- 1 1/2 cups mayonnaise
- 4 cloves garlic, minced
- Juice from 1/2 lemon
- 2 tbsp Dijon mustard
- 1 tbsp creamed horseradish
- 1 tbsp pickle juice or white wine vinegar
- 1 tbsp Worcestershire sauce
- 1 tbsp hot sauce
- 4 tsp Mae’s Seasonings Cajun Blackened
Instructions
- Boil macaroni according to package directions. Drain well and transfer to a large bowl and add oil. let sit to dry.
- Meanwhile make dressing: In a medium bowl combine all ingredients together and mix well.
- Once pasta has cooled down, add in red bell pepper, green onions, red onions and celery. Mix together and add the dressing and mix to combine.
- Let sit in refrigerator for at least 2 hours before serving.
