Pumpkin Loaf

Pumpkin loaf made with Mae's Seasonings Pumpkin Spice. Perfect for the fall with pumpkin spiced lattes.

Ingredients
  

  • 2 cups all purpose flour
  • 6 tsp Mae's Seasonings Pumpkin Spice
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup pure pumpkin (not pumpkin pie filling)
  • 1 cup brown sugar, packed
  • 1/2 cup pure apple juice
  • 2 large eggs
  • 2 tbsp olive oil
  • 1 tsp vanilla extract

Instructions
 

  • Preheat oven to 350 F. Sift together flour, Pumpkin Spice, baking powder, baking  soda and salt into medium bowl.
  • Combine pumpkin, brown sugar, apple juice, eggs,, oil and vanilla in large bowl; stir well. Stir in flour mixture just until moistened.
  • Spoon into a greased 9 X 5 inch loaf pan. Bake for 65 minutes or until wooden pick inserted in center comes out clean. 
  • Cool in pan on wire racks for 10 minutes;  remove to wire rack to cool completely

Pumpkin Chocolate Gingerbread:

  • Substitute Pumpkin Spice for Mae’s Seasonings Gingerbread Spice and add 2 cups chocolate chips.
