Smoky Salmon Salad
Salmon bites made with Mae's Seasonings Smoked Hickory. Served over top of the salad. Serve with vinaigrette of your choice.

Ingredients
Salmon:
2
salmon fillets
1
tbsp
Mae’s Seasonings Hickory Smoked
1
tbsp
olive oil
1
tbsp
butter
Juice of 1/2 lemon
Salad:
1
head butter lettuce, torn into bite sized pieces
Grape or cherry tomatoes, halved
Red bell pepper slices
Red onion slices
Feta cheese
Sliced almonds
Instructions
Cut salmon into cubes and place in a small bowl. Toss with Hickory Smoked rub and let sit for 20 minutes.
Heat oil in a large frypan over medium heat and once hot, add salmon and cook for 2 - 3 minutes per side.
Once cooked, melt in butter and toss to combine. Take off heat and in lemon juice.
On 2 large plates, place lettuce, tomatoes, bell peppers, and red onions. Top with feta, sliced almonds, and salmon. Pour over juices from the pan.
Serve with dressing of choice.
