Smoky Salmon Salad

Salmon bites made with Mae's Seasonings Smoked Hickory. Served over top of the salad. Serve with vinaigrette of your choice.

Ingredients
  

Salmon:

  • 2 salmon fillets
  • 1 tbsp Mae’s Seasonings Hickory Smoked
  • 1 tbsp olive oil
  • 1 tbsp butter
  • Juice of 1/2 lemon

Salad:

  • 1 head butter lettuce, torn into bite sized pieces
  • Grape or cherry tomatoes, halved
  • Red bell pepper slices
  • Red onion slices
  • Feta cheese
  • Sliced almonds

Instructions
 

  • Cut salmon into cubes and place in a small bowl. Toss with Hickory Smoked rub and let sit for 20 minutes.
  • Heat oil in a large frypan over medium heat and once hot, add salmon and cook for 2 - 3 minutes per side.
  • Once cooked, melt in butter and toss to combine. Take off heat and in lemon juice.
  • On 2 large plates, place lettuce, tomatoes, bell peppers, and red onions. Top with feta, sliced almonds, and salmon. Pour over juices from the pan.
  • Serve with dressing of choice.
