Turkey Barley Soup
Soup made with Mae's Seasonings Poultry & Stuffing Seasoning. This is used with leftover turkey. But you could also use chicken in this. This freezes very well.

- Olive oil
- 2 onions, chopped
- 4 celery ribs, chopped
- 4 - 6 carrots, chopped
- 6 garlic cloves, minced
- 2 cups sliced mushrooms
- 10 cups turkey broth
- 1 tbsp Mae’s Seasonings Poultry Seasoning
- 1 cup pearl barley
- 3 cups diced cooked turkey
In a large pot on medium - high heat, sauté onions, celery, and carrots in oil until lightly browned. Add in garlic and mushrooms and cook for 5 minutes or until mushrooms are browned.
Add in turkey broth, Poultry Seasoning, and barley and stir to combine. Bring to a boil and reduce heat to low and let simmer for 40 - 45 minutes or until barley is cooked.
Add in turkey and cook for 5 minutes or until turkey is warmed up.
