Ingredients
- 1 large yam
- 2 red bell peppers
- olive oil
- 2 tsp Mae's Seasonings Butter Chicken, divided
- 1 onion, diced
- 4 - 6 garlic cloves, minced
- 2 cups vegetarian broth
- 1 can (400 ml) coconut milk
Instructions
- Preheat oven to 375F. Cut up yam in large chunks and toss with olive oil and 1 tsp Butter Chicken Seasoning. Then slice peppers in half and discard the seeds and brush tops with olive oil. Place yams and bell peppers in a baking pan and bake for 30 minutes.
- Meanwhile, in a medium pot on medium - high heat, sauté onions until lightly browned. Add garlic and 1 tsp Butter Chicken Seasoning and cook 1 minute. Add in veggie broth and cooked yams and bell peppers.
- Using an immersion blender, puree soup and bring to a boil and let simmer for 10 minutes. Add in cream and heat until warmed up.
- Taste and adjust seasonings if needed.
