Chili Lime Rice

Fluffy jasmine or basmati rice cooked with bell peppers, corn, garlic, and broth, then finished with lime juice, zest, and Mae's Chili Lime seasoning. A bold, flavourful side dish ready in 20 minutes.

Ingredients:

  • 1 tbsp olive oil
  • 1 cup rice, Jasmine or Basmati
  • 1/2 onion, diced
  • 3 garlic cloves, minced
  • 1 red bell pepper, diced
  • 2 cups chicken or vegetable broth
  • 1 cup corn kernels
  • 2 tsp Mae’s Seasonings Chili Lime
  • 1/2 tsp salt
  • 1/2 lime, juice and zest

 

Instructions:

  1. Rinse the rice before cooking. Heat oil in a large saucepan over medium - high heat. Add rice and cook about 3 - 5 minutes or until golden. Then add the onions, garlic, and bell peppers and sauté until softened, about 2 - 3 minutes.
  2. Add in broth, corn, Chili Lime, and salt. Bring to a boil; cover and reduce heat to low. Let simmer for 15 minutes or until the water is absorbed and the rice is tender.
  3. Remove pan from the heat but keep it covered and let sit for 10 minutes.
  4. Add lime juice and zest and mix into the rice.
