Chili Lime Rice

Fluffy jasmine or basmati rice cooked with bell peppers, corn, garlic, and broth, then finished with lime juice, zest, and Mae's Chili Lime seasoning. A bold, flavourful side dish ready in 20 minutes.

Ingredients:
- 1 tbsp olive oil
- 1 cup rice, Jasmine or Basmati
- 1/2 onion, diced
- 3 garlic cloves, minced
- 1 red bell pepper, diced
- 2 cups chicken or vegetable broth
- 1 cup corn kernels
- 2 tsp Mae’s Seasonings Chili Lime
- 1/2 tsp salt
- 1/2 lime, juice and zest
Instructions:
- Rinse the rice before cooking. Heat oil in a large saucepan over medium - high heat. Add rice and cook about 3 - 5 minutes or until golden. Then add the onions, garlic, and bell peppers and sauté until softened, about 2 - 3 minutes.
- Add in broth, corn, Chili Lime, and salt. Bring to a boil; cover and reduce heat to low. Let simmer for 15 minutes or until the water is absorbed and the rice is tender.
- Remove pan from the heat but keep it covered and let sit for 10 minutes.
- Add lime juice and zest and mix into the rice.
