Ingredients
CHICKPEAS:
- 1 can (14 oz) chickpeas, drained and rinsed
- 2 tbsp olive oil
- 1 tbsp red wine vinegar
- 1 tbsp lemon juice
- 4 garlic cloves, minced
- 2 tsp Mae’s Seasonings Greek Souvlaki
- 1 tsp salt
BOWLS:
- 1 cup rice, cooked to package directions
- 1/2 cup cherry or grape tomatoes, halved
- 1/2 cup chopped cucumbers
- 1/4 cup kalamata olives
- 1/4 cup sliced red onions
- 1/2 cup crumbled feta cheese
- Tzatziki sauce
Instructions
- Preheat oven to 350 F.
- In a medium bowl, stir together chickpeas, olive oil, red wine vinegar, lemon juice, garlic, Greek Souvlaki and salt.
- Place on baking pan and cook for 15 - 20 minutes or until lightly browned.
- Assemble bowls with cooked rice, chickpeas, tomatoes, cucumbers, olives and red onions.
- Top with feta and Tzatziki.
