BBQ Ranch and Pineapple Salad

A fresh and flavourful salad featuring grilled chicken marinated in Mae's Candied Jalapeño BBQ Sauce and Hickory Smoked Rub, topped with grilled pineapple, corn, and a homemade BBQ Ranch dressing.

Ingredients:
Marinade:
- 1/4 cup olive oil
- 2 tbsp Mae’s Seasonings Candied Jalapeno BBQ Sauce
- 2 tbsp pineapple juice from can of pineapple
- 1 tbsp Mae’s Seasonings Hickory Smoked
- 2 tbsp brown sugar or honey
- 2 large chicken breasts, cut in half horizontally
Salad:
- 1/2 head iceberg lettuce
- 1 cup grape or cherry tomatoes, halved
- 1/4 red onion, thinly sliced
- 2 cups corn niblets or 2 ears of corn, grilled or roasted
- 1/2 can pineapple rings, grilled or roasted
- Shredded cheddar cheese
- Bacon (optional)
BBQ Ranch Dressing:
- 1 recipe of our Ranch
- 1/4 cup Mae’s Seasonings Candied Jalapeno BBQ Sauce
Instructions
- In a small bowl, mix together all ingredients for the marinade. Toss with the chicken and let marinate in fridge for 4 - 8 hours.
- In another small bowl, mix together all ingredients for the BBQ Ranch and let sit in fridge.
- Before cooking chicken, let sit out at room temperature for 30 minutes.
- You can either cook chicken in a frypan with some oil or grill on your BBQ, cook chicken about 4 - 5 minutes per side or until cooked and no longer pink. Remove and set aside.
- Then cook or grill pineapple and corn.
- On 2 large salad plates, place lettuce, tomatoes, onions, corn, pineapple, cheese and bacon.
- Top with grilled chicken and serve with BBQ Ranch.
