A fresh and flavourful salad featuring pan-seared salmon seasoned with Mae's Hickory Smoked BBQ Rub, topped with butter lettuce, feta, sliced almonds, and a bright lemon garlic vinaigrette. Ready in under 30 minutes.

Ingredients:
Salmon:
- 2 salmon fillets
- 1 tbsp Mae’s Seasonings Hickory Smoked
- 1 tbsp olive oil
- 1 tbsp butter
- Juice of 1/2 lemon
Salad:
- 1 head butter lettuce, torn into bite sized pieces
- Grape or cherry tomatoes, halved
- Red bell pepper slices
- Red onion slices
- Feta cheese
- Sliced almonds
Suggested Dressing:
- Lemon Garlic Vinaigrette
Instructions:
- Cut salmon into cubes and place in a small bowl. Toss with Hickory Smoked rub and let sit for 20 minutes.
- Heat oil in a large frypan over medium heat and once hot, add salmon and cook for 2 - 3 minutes per side.
- Once cooked, melt in butter and toss to combine. Take off heat and in lemon juice.
- On 2 large plates, place lettuce, tomatoes, bell peppers, and red onions. Top with feta, sliced almonds, and salmon. Pour over juices from the pan.
- Serve with dressing of choice.
