Chicken Stroganoff

Tender pan-seared chicken in a rich creamy mushroom gravy, seasoned with Mae's Oma's Fried Chicken Seasoning. Ready in 50 minutes — serve over mashed potatoes or egg noodles.

Ingredients:

Gravy:

  • 3 tbsp butter
  • 1 onion, diced
  • 6 garlic cloves, minced
  • 4 cups sliced mushrooms
  • 2 tsp Dijon mustard
  • 1/2 cup dry white wine or chicken broth
  • 2 tbsp flour
  • 2 cups chicken broth
  • 1 tbsp Worcestershire sauce
  • Salt and pepper to taste
  • 1/2 cup sour cream
  • Mashed potatoes or egg noodles

 

 

Instructions:

  1. Season chicken with Fried Chicken Seasoning. Dredge each breast in flour and set aside.
  2. Heat the butter and oil in a large frypan over medium heat and sear the chicken until browned, about 4 minutes per side. Transfer to a plate and set aside.
  3. Gravy: Melt the butter in the same pan and sauté the onions until lightly browned. Add garlic and sauté about 1 minute. Then add in mushrooms and cook until golden, about 5 minutes. Add in mustard, mixing well to coat.
  4.  Pour in wine to deglaze the pan, and let reduce for about 3 minutes while stirring occasionally. Add flour and cook, stirring for 1 minute. Then add in broth and Worcestershire. Mix well and let simmer until the sauce begins to thicken slightly, about 4 minutes.
  5. Reduce heat to medium - low and stir in sour cream. Let simmer until sauce is smooth and creamy and season with salt and pepper if desired. Return chicken to the pan and simmer until chicken is cooked through, about 3 - 5 minutes.
  6. Serve over mashed potatoes.
