Fried Chicken Salad

Buttermilk-marinated chicken tenders coated in a seasoned flour blend with Mae's Oma's Fried Chicken Seasoning, pan-fried until crispy, and served over a loaded salad of greens, bacon, hard-boiled eggs, tomatoes, red onion, and cheddar — finished with honey mustard dressing.

Ingredients:
- 1 pound chicken tenders
- 3/4 cup buttermilk
- 2 tbsp hot sauce
- 1 tsp salt, divided
- 1/3 cup all purpose flour
- 1/3 cup rice flour
- 1/3 cup cornstarch
- 1 tsp baking powder
- 4 tsp Mae’s Seasonings Oma’s Fried Chicken
- canola oil
Salad:
- lettuce greens
- diced tomatoes
- red onion slices
- 8 bacon slices, cooked
- 4 hard boiled eggs
- shredded Cheddar cheese
- Honey Mustard Dressing
Instructions:
- In a medium bowl, combine together buttermilk, hot sauce, and 1/2 tsp salt. Toss well with chicken and let marinate for at least 8 hours or overnight.
- In a medium bowl combine together all-purpose flour, rice flour, cornstarch, baking powder and Oma’s Fried Chicken Seasoning and 1/2 tsp salt. Set aside.
- In a large skillet over medium - high heat, cook chicken in canola oil for 2 - 3 minutes per side or until cooked and set aside.
- On 4 salad plates, place lettuce, tomatoes, red onions, bacon and eggs. Top with chicken and cheddar cheese.
- Serve with Honey Mustard Dressing
