
Mexican Street Corn Salad
Ingredients
- 1 tbsp olive oil
- 1 tbsp butter
- 2 garlic cloves, finely minced
- 4-5 ears corn, husks removed and kernels cut off (3 cups)
- Salt and pepper to taste
- 3 tbsp mayonnaise
- 3 tbsp sour cream
- 1 lime, juice and zest
- 1/2 tsp Mae’s Seasonings Chili & Taco
- 1/2 cup crumbled Cotija or Feta cheese, (plus more for topping)
- 1/4 red onion, finely chopped
- 1/2 cup thinly sliced green onions
- 1 small jalapeno pepper, seeded and diced
Instructions
- In a large frypan over medium - high heat, melt oil and butter. Add garlic and cook for 30 seconds. Add corn kernels and cook for 5 - 7 minutes or until they start to brown. Season corn with salt and pepper.
- Meanwhile in a small bowl, mix together mayo, sour cream, lime juice, Mae’s Seasonings Chili & Taco, and Cojita. Transfer corn to a large bowl and add dressing. Toss well to combine. Add red onions, green onions, and jalapeno. Toss again and crumble over more Cotija.
