Chicken Gyros
Chicken is marinated first in Greek Yogurt, lemon and spices to make very flavourful and juicy chicken. This is made with Mae's Seasonings Greek Souvlaki
Ingredients
Marinade:
- 1/2 cup plain Greek yogurt
- Juice from 1 lemon (2 tbsp)
- 1 tbsp olive oil
- 1 tbsp red wine vinegar
- 1 tbsp Mae’s Seasonings Greek Souvlaki
- 1 tsp salt
Filling:
- butter
- 4 pita bread
- Tzatziki
- Tomatoes
- Cucumbers
- Red onions
- crumbled feta cheese
Instructions
- In a small bowl, mix together Greek yogurt, lemon juice, olive oil, red wine vinegar, Greek Souvlaki and salt. Toss with chicken and let marinate in fridge for at least 8 hours or overnight.
- Preheat oven to 400 F.
- Take chicken out of the marinade and place on baking tray and cook for 35 - 40 minutes or until cooked and no longer pink. Set aide and once cool enough to handle cut up into bite sized pieces.
- In a large frypan over medium heat, heat up some butter and fry pita shells until warmed up and golden.
Assemble:
- Place warmed pita bread onto a plate and spread with Tzatziki; then top with tomatoes, cucumbers, red onions and feta. Repeat with remaining pita. Roll up and serve.
