Pork & Pineapple Stir Fry
Stir Fry made with Mae's Seasonings Garlic Lovers. The pork is cooked with the pineapple to make extra tender pork. The enzyme in the pineapple tenderizes the meat.
Ingredients
- 2 tbsp sesame oil
- 1 onion, coarsely chopped
- 3 red or orange bell peppers, coarsely chopped
- 1 pound pork tenderloin, (cut into bite sized pieces)
- 2 cans (398 ml) pineapple chunks, (reserving juice for sauce)
- 1/4 cup thinly sliced green onions
- 1 tbsp sesame seeds
- rice or rice noodles
Sauce:
- 1/2 cup light soy sauce
- 1/2 cup reserved pineapple juice
- 1/4 cup apple cider vinegar
- 2 tbsp brown sugar
- 1 tbsp cornstarch
- 1 tbsp Mae’s Seasonings Garlic Lovers
- 1 tsp ground ginger
Instructions
- In a large frypan, heat 1 tbsp oil. Add onions and bell peppers and sauté until lightly browned and almost tender. Remove to a plate and set aside.
- In same frypan, add 1 tbsp oil; add pork and pineapple and cook until pork is cooked. Then add back in pepper mixture.
- Sauce: In a small bowl, mix together all ingredients and stir into pork and pepper mixture and cook for 1 - 2 minutes or until sauce thickens up.
- Serve over rice or rice noodles and garnish with green onions and sesame seeds.
