
Chipotle Pork with Cherry Salsa
Ingredients
- 1 pork tenderloin
Marinade:
- Juice of 1 lime (2 tbsp)
- 2 tbsp olive oil
- 3 tbsp brown sugar
- 1 tbsp Mae’s Seasonings Chipotle Cocoa
- 3 cloves garlic, minced
Cherry Salsa:
- 1 1/2 cups cherries, pitted & sliced into quarters
- 1 shallot, diced
- 1 small jalapeno, diced
- Juice of 1/2 lime
Instructions
- In a small bowl mix together all marinade ingredients and pour into a large Ziploc bag. Place pork into the bag, squeezing to rub into the meat. Let marinate in fridge for at least 6 hours or overnight. Let sit out at room temperature for 30 minutes before grilling.
- Preheat the grill to medium heat. Remove the pork from marinade, shaking off any excess marinade. Place pork on grill and cover. Cook for 6 - 8 minutes per side.
- Let stand for 10 minutes before serving.
- Mix together all ingredients for cherry salsa and place on top of pork.
