Classic Potato Salad
Potato salad is a versatile dish that combines tender potatoes with a creamy dressing that is made with our Garlic Lovers Dip Mix. It's a staple at picnics and barbecues, offering a refreshing contrast to grilled meats and other hearty fare.
Ingredients
- 3 lbs red skinned potatoes
- 1/2 cup thinly sliced celery
- 1/2 cup minced red onion
- 1/2 cup thinly sliced green onion
- 6 hard boiled eggs, cooled and sliced
Dressing:
- 1 1/2 cups mayonnaise
- 1 tbsp apple cider vinegar or pickle juice
- 1 tbsp granulated sugar
- 1 tbsp Mae’s Seasonings Garlic Lovers
- 1 tbsp yellow mustard
- 1 tsp smoked or sweet paprika, for garnish
Instructions
- You can either bake or boil your potatoes. But baking them has more flavour.
- Bake: Preheat oven to 400F. Wash potatoes and prick them with a fork. Bake for 50 minutes or up to 1 hour or until they are fork tender. Remove from oven and cool completely.
- Boil: Peel and cut potatoes into even sized pieces. Place in a large pot, and cover with water. Once boiling reduce heat to medium and cook for 10 minutes or until fork tender. Strain and cool completely.
- Mix together all ingredients for dressing and set aside.
- Once potatoes are cool slice up for salad, and mix with celery, onions, eggs and dressing. Sprinkle with paprika.
