Broccoli Cheddar Soup
Broccoli cheddar soup is a classic Canadian comfort dish, featuring tender broccoli and creamy cheddar cheese. The soup comes together with a blend of aromatic onions and garlic. Perfect for chilly days, it’s hearty yet smooth, delivering warmth and flavour in every bowl.
Ingredients
- 1/3 cup butter
- 1 onion, chopped
- 4 garlic cloves, minced
- 2 tsp Mae’s Seasonings Tuscan Herb & Garlic
- 1/3 cup flour
- 2 1/2 cups half and half cream
- 5 cups chicken broth
- 1 head broccoli florets
- 1 cup Velveeta cheese, cubed
- 3 cups shredded Cheddar cheese
- Salt and pepper to taste
- 1 tsp hot sauce, optional
Instructions
- Melt butter in a large pot over medium heat. Add the onion and cook until softened and is lightly browned. Add in garlic and Tuscan Herb and cook for 1 minute.
- Sprinkle the flour over and mix in. Cook for about 2 minutes.
- Slowly whisk in the half and half. Then pour in the chicken broth and whisk to remove any lumps if any.
- Bring the mixture to a boil then add in broccoli. Cook until tender, about 10 minutes.
- Using an immersion blender, blend the soup until your desired consistency.
- Return soup to stove and add in both cheeses, stirring until melted.
- Taste and add salt and pepper if needed and hot sauce if using.
