
Greek Pasta Salad
Ingredients
- 3 cups fusilli pasta, uncooked
- 1 tbsp olive oil
- 1 cucumber, coarsely chopped
- 1 cup grape tomatoes, halved
- 1 small red bell pepper, coarsely chopped
- 1/2 small red onion, thinly sliced
- 1 1/2 cups crumbled feta cheese
- 1/2 cup pitted kalamata olives, halved
Dressing:
- 1 cup mayo
- 1/2 cup sour cream
- 1 1/2 tbsp Mae’s Seasonings Greek Dip Mix
- 1 1/2 tbsp lemon juice
- 1 tsp dried dillweed
Instructions
- Cook pasta according to package directions. Drain well and transfer to a large bowl and add oil. let sit to dry.
- Meanwhile, mix together all dressing ingredients and set aside.
- Once pasta has cooled down, mix with cucumbers, tomatoes, red peppers, onions, feta and olives until combined.
- Mix in dressing and let sit in fridge for at least 2 hours before serving.
