
Pumpkin Chocolate Chip Muffins
Pumpkin Chocolate Chip Muffins made with Mae's Seasonings Pumpkin Spice. You could also substitute our Gingerbread Spice for this as well. These are freezer friendly.
Ingredients
- 4 eggs
- 1 cup granulated sugar
- 1 cup packed brown sugar
- 1 cup canola oil
- 1/2 cup butter, melted
- 1 can (15 oz) can pure pumpkin
- 3 cups all purpose flour
- 6 tsp Mae’s Seasonings Pumpkin Spice or Gingerbread Spice
- 2 tsp baking powder
- 2 tsp baking soda
- 1 tsp salt
- 3 cups chocolate chips
Instructions
- Preheat oven to 375 F. Spray muffins pans with nonstick cooking spray.
- In a large bowl, combine eggs, both sugars, oil, butter and pumpkin until smooth; set aside.
- In a medium bowl, stir together flour, Pumpkin Spice, baking powder, baking soda and salt.
- Fold the dry ingredients into the wet ingredients just until moistened. Fold in chocolate chips.
- Fill greased muffins tins 3/4 full.
- Bake for 15 - 18 minutes or until toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the pan for 10 minutes before removing to cool completely.
